How to make Karon’s Family Taco Soup

INDIANAPOLIS (WISH) — This recipe is hearty, delicious, and a dinner the whole family will enjoy! A big thank-you to Karon of Franklin Township for sharing her recipe with us during this time when we are all cooking at home more.

  • 2-3 pounds ground beef 
  • 1 large sweet onion
  • 1 package taco seasoning
  • 8 ounces cream cheese 
  • 1 can Rotel tomatoes 
  • 1 1/2 cup frozen or canned corn 
  • chicken stock 

Toppings: 

  • sour cream
  • shredded cheese
  • fresh cilantro 
  • green onions 
  • tortilla chips for dipping

1. In a medium stock pot sprayed with cooking spray (or use 1 tablespoon olive oil), saute ground beef with sweet onion. Add taco seasoning and a little water and continue to cook.  

2. Add in cream cheese and cook until melted. Stir in Rotel tomatoes, corn, and then just enough chicken stock to make it the desired thickness that you enjoy.  Cook on low for 10 minutes.

3. Serve in bowls topped with sour cream and shredded cheese, and use tortillas to dip in it!  Enjoy!
