Brett Butler’s St. Patrick’s Day Cocktails: ‘Irish Mojito,’ ‘Finnegan’s Wake’

St. Patrick’s Day is just a few weeks away, so we want to help you get ahead of the game! Brett Butler, mixologist for Alcomy, joined us today with two cocktail recipes perfect for the holiday, an “Irish Mojito” and “Finnegan’s Wake.”

Irish Mojito

Ingredients:

  • 2 oz.  Drumshanbo Gunpowder Irish Gin
  • 1 oz.  Ginger-Brown sugar cordial (simple syrup)
  • 3/4 oz.  Lime juice
  • 1/2 oz.  Celery juice
  • 2-3 sprigs fresh mint
  • 4-5 slices fresh cucumber

Directions: 

Muddle cucumber, mint, ginger-brown sugar cordial and lime juice together for 20 seconds until thoroughly mashed.  Add celery juice and gin, ice and shake for about 30 seconds until well mixed and chilled.  Double-strain into a coupe glass and garnish with fresh microgreens.

Finnegan’s Wake

Ingredients:

  • 2 oz.  Jameson Stout Edition Irsh whiskey
  • 1 oz.  Ginger-Brown sugar cordial
  • 3 oz.  Vanilla Cold Brew
  • 2 oz.  Guiness Stout
  • fresh nutmeg

Directions:

Add Jameson whiskey, cordial and cold brew to a mixing tin with ice, and shake vigorously for about 30 seconds until thoroughly mixed and chilled.  Pour the entire contents into a large double-rocks or pint glass.  Flout Guinness stout over the top and garnish with fresh nutmeg and cocoa nibs.
