Salad recipe to combat magnesium deficiency
INDIANAPOLIS (WISH) – Sources of magnesium are everywhere, but Hoosiers rarely think of it in a salad.
Dark leafy greens, avocados, cucumbers, nuts, pumpkin seeds, whole grains, bran, whole wheat pasta, spirulina, shiitake, coconut meat, black tea…the list goes on and on of sources of magnesium in food.
The best way to combat magnesium deficiency is to schedule regular doctor visits, exercise and have a well-balanced diet.
Colorful Magnesium-Rich Salad from the Celestial Apothecary
Spinach Leaves-stemmed and washed Cucumber, with skin, sliced
Black beans
Avocado 1 ounce (6 whole Brazil nuts)
Pumpkin seeds
Coconut flakes (Unsweetened)
1 cup red raspberries
Dressing:
Yield:1 ¼ cups
½ cup sesame oil
¼ cups raw honey
¼ cup apple cider vinegar
3 Tbsp. toasted sesame seeds, ground in a coffee grinder
2 Tbsp. fresh squeezed lemon juice
2 cloves of fresh garlic minced
1. Put into jar with lid and shake.
2. Refrigerate
3. Put everything except the red raspberries into a round sided bowl; add dressing to taste, and mix.
4. Gently mix. Plate and garnish with berries.
