Who wants these?
• People who want to do something different
• Great Low-Carb option (Keto)
• Use as an appetizer or be used as a cake for your rehearsal dinner
o savory– use with Smoking Goose or Turchetti’s for an all-local option
• Or to replace The Wedding Cake
o Serve with fruit and local honey, and/or serve with a local chocolate (such as Xchocol’Art) as a sweet option
• Sophisticated yet simple – not much needed
• Unique sharing with wedding party/family (unserved cheese)
What cheese is used?
o Almost cheese can be used!
Bottom Tiers: The ones that work best for the bottom are the aged cheeses – Gouda (aged 30-60 days), Haymaids (aged 60-90 days), Nightshade (aged 9mos – 1 year)
Top Tiers: The shorter aged, softer cheeses work well on top as they are more delicate…these include: Chicory (mild blue); Trillium (triple cream); Tiger Lily (Taleggio-style)
o Something old, something new, something bloomy, something blue!
• Old – Nightshade – aged 9-12 months tastes like a aged cheddar/aged gouda
• New – Nettle – it’s a fresh cheese
• Bloomy – Trillium – decadent triple cream
• Blue – Chicory – mild blue cheese
Tips for assembling a wedding cake:
1. Use special dishware
2. Inspect and wipe down wheels – can color wheels if you want
3. Garnish with fresh fruit, flowers, herbs
4. Make sure you have 1-2 people with lots of knives and a cheese wire to serve!
Tips for doing an Alternative Wedding Cake for your wedding:
• Do your homework – online ideas or talk to your caterer
• Start early! At least 6 months in advance.
• Schedule Sampling (or visit us at a farmers market) to try all cheeses
• Use experienced caterer
