Valentine’s Day is a time to celebrate with the one you love and amaze them with your cooking skills! This holiday, with a pinch of love and a dash of romance, anyone can create an impressive meal at home. 

Chef Brian Newlin, Bonefish Grill, shares their take on the Filet and Shrimp Thermidor, the ultimate surf and turf dish to spruce up your Valentine’s date night meal, along with a hand-crafted cocktail, like Bonefish Grill’s Woodford Reserve Old Fashioned, which also works great with Bonefish Grill’s Old Fashioned Cedar Plank Salmon.

Filet and Shrimp Thermidor
Ingredients:
o    2 each 6 oz Filet Mignons
o    3 tsp Sea Salt
o    2 tsp Freshly Cracked Black Pepper
o    3 Spritz of Olive Oil (Spray Bottle)
o    6 each 16/20 count Shrimp, Peeled and deveined with tail on
o    3 Spritz of Virgin Olive Oil (Spray Bottle)
o    2 wt oz CKL Lobster Meat, Cooked (and thawed if frozen)
o    1/2 Cup Lobster Bisque (Your favorite)
o    2 of your favorite sides

Directions:
1.    Fire up the grill to 400°F.
2.    Place the steaks on a flat tray.
3.    Sprinkle both sides of each steak with salt and pepper. Ensure the steaks have been evenly coated. Spray the hot grill with olive oil. Spray the steaks as well.
4.    Place the steaks on the grill at 2 o’clock position and cook 3-4 minutes. Use a spatula to rotate the steaks to 10 o’clock position. Cook an additional 3-4 minutes. (This will achieve the diamond grill marks)
5.    Flip the steaks over carefully and repeat step 4 until steaks are cooked to the desired temperature.
6.    After flipping the steak, season the shrimp with salt and pepper. Spray the hot grill with olive oil. Spray the shrimp as well.
7.    Place your shrimp on the grill and cook on each side for 1-2 minutes until done.
8.    Remove the steak and shrimp from the grill.
9.    Transfer the steaks onto two separate plates.
10.    Microwave the cooked lobster meat for 20-30 seconds to heat.
11.    Shingle/lean three shrimp on each steak. Top each steak with 1 ounce of warm lobster meat.
12.    Pour 2 ounces of lobster bisque on the front side of your proteins allowing it to pool on the plate.
13.    Serve with your two favorite sides and enjoy!

Old Fashioned Cedar Plank Salmon
Ingredients:
o    2 each Cedar Planks (Find these at your local grocery store or online)
o    Olive Oil Spray
o    2 each 7-8 oz Salmon Fillets, Skin Off
o    2 TBSP + 2 tsp Maple Bourbon Glaze (Recipe Below)
o    Sea Salt and Freshly Cracked Black Pepper to taste
o    1 ½ fl oz Cherry Gastrique (Recipe Below)
o    1/2 tsp Parsley, Chopped
o    1/2 tsp Orange Zest
o    Your Favorite Side Items

Directions:
14.    Soak the cedar planks in water for 6-12 hours.
15.    Lay out the cedar planks on a sheet tray with the smoother side up.
16.    Spray each cedar plank with olive oil for 2-3 seconds.
17.    Preheat the oven to 350°F.
18.    Place the salmon fillets in a small bowl and add 2 tablespoons of the maple bourbon glaze.
19.    Gently massage the glaze into the salmon.
20.    Place the glazed salmon fillets onto the center of each cedar plank.
21.    Wipe off any drippings from the glaze.
22.    Sprinkle a pinch of salt and pepper over each piece of salmon.
23.    Place the salmon in your preheated oven for 30-35 minutes until done and salmon can be easily flaked with a fork.
24.    Remove from the oven and spoon 1 teaspoon of maple bourbon glaze over each piece of salmon.
25.    Ladle 3/4 fl oz of cherry gastrique with whole cherries over each piece of salmon.
26.    Transfer the cedar planks to a plate and garnish each with a ¼ tsp of parsley and orange zest.
27.    Serve with your two favorite sides.

Maple Bourbon Glaze
Ingredients:
o    1/4 Cup Maple Syrup
o    1/4 Cup Bourbon
o    1/4 Cup Dijon Mustard
o    1/4 Cup Soy Sauce
o    1/4 Cup Canola Oil

Directions:
1.    Combine all ingredients in a mixing bowl.
2.    Whisk well until all ingredients have been combined.
3.    Keep at room temperature until ready to use.

Cherry Gastrique
Ingredients:
o    1 Jar of Bordeaux Cherries, Without Pits (13.5 oz)
o    1/4 fl oz Red Wine Vinegar
o    2 TBSP Butter, Unsalted

Directions:
1.    Strain and reserve all the cherry juice in a medium size sauce pot.
2.    Remove and discard the stem from each cherry while also ensuring the pits have been removed.
3.    Add the cherries to your sauce pot with the reserved juice.
4.    Bring the sauce pot to a boil over medium high heat.
5.    Simmer for 10-15 minutes or until the juice has a syrup-like consistency.
6.    Add the red wine vinegar and butter.
7.    Mix well and continue cooking for two minutes until the butter has been incorporated.
8.    Reduce the heat to low and keep warm until plating the salmon.

Woodford Reserve Old Fashioned

Ingredients:                    Volume:
Bourbon                    2 oz
Vanilla Simple Syrup                                              .75 oz
Fresh Orange Wedge                1 ea.
Bordeaux Cherry                                               1 ea.
Angostura Bitters                2 dashes
 
Procedure:
•    Combine all the ingredients into mixing glass, except Bourbon and muddle.  
•    Pack mixing glass with ice, add Bourbon and roll twice.  
•    Strain into a rocks glass with ice.   
•    Garnish with Bordeaux cherry and orange wedge peel.  
 
Helpful Hints:
    You can use any Bourbon you prefer. 
    Best served over a large ice cube.  Recommend a large square or circular ice mold for best results.  
    Fun Fact:  Have you ever wondered why some cocktail taste better over large ice cubes?  Large ice cubes have a smaller surface area than a glass packed with small ice cubes causing the ice to melt more slowly and allowing the drinker to sip & enjoy their cocktail over a longer span of time without the cocktail becoming watered down.
