Recipe for Mia’s Mini Cheesecake Santa Hats

These cheesecake treats are sweet and adorable — a lot like Mia! Enjoy this holiday recipe from her kitchen to yours.
Mia’s Mini Cheesecake Santa Hats
Crust
10-12 chocolate graham crackers or chocolate cookies
2 tbsp melted butter
1 tbsp sugar
Filling
12 ounces softened cream cheese
1/2 cup sugar
1/2 cup eggnog
1 tbsp flour
1 teaspoon vanilla
1/4 teaspoon salt
1 egg
Hat
Small strawberries
Whipped cream made with 1/2 cup heavy cream and 2 tbsp powdered sugar
1. Preheat oven to 350 degrees.
2. In a food processor, blend chocolate graham crackers until fine and crumbly. Add in melted butter and sugar and process again. Divide crumb mixture between 12 mini-muffin cups, pressing down firmly to create an even layer. Bake for 5 minutes.
3. Reduce oven temp to 325.
4. In a large bowl, beat together cream cheese and sugar until fluffy and smooth. With mixer running on low, add in the rest of the filling ingredients. Increase speed and beat until no lumps remain. Divide batter between muffin tins. Bake for 15 – 19 minutes or until cheesecakes are set. Remove from oven and let cheesecakes cool until they are at room temp.
5. Chill cheesecakes in the refrigerator. Remove from pan, and top each with a dollop of whipped cream and a strawberry turned upside down (like a santa hat). Put a dollop more of whipped cream for the ball on the top of the hat. Dust with powdered sugar.
