Registered Dietitian Annessa Chumbley shares some tasty recipes and the benefits of eating seafood:

Those Omegas also determine your brains ability to preform. Also, studies show that kids who eat fish do better in school. Association between fish intake and better grades. 
– Sound sleep: research also shows that kids who eat seafood sleep better 
– Eye enhance: seafood is great for eye health!  Nearly half of our eye’s light-detecting cell structure is made up of Omega-3s.

Easy One-Pan Salmon with Garlic Ginger Sauce 
Delicious, gluten-free, ready in minutes, and totally kid-friendly, this recipe is proteins + plants, and a great way to get in more vegetables and those necessary Omega-3s. Eat up! 

16 ounce salmon filet
1 teaspoon lemon zest 
1 clove garlic, grated 
2 sweet onions, sliced in half and then into thin wedges
2 broccoli crowns, cut into florets  
2 large red bell pepper, chopped into chunks 

Sauce: 
1 cup Hellmann’s® Mayonnaise Dressing with Olive Oil
1 cup of the roasted onion & red bell pepper 
2 tablespoon lemon juice 
1/2 teaspoon grated garlic 
1/2 teaspoon grated ginger 
1/2 teaspoon kosher salt 

Directions:
1. Preheat oven to 450º.  
2. In a bowl, toss chopped onions, broccoli florets and bell pepper chunks, with 2 tablespoons olive oil, garlic and 1/2 teaspoon salt. Arrange in a single layer on a parchment-covered baking sheet. Roast for 20 minutes. 
3. Remove vegetables from oven and add salmon filet to the middle of the baking sheet, pushing vegetables to the sides.  Season the top of the salmon with 2 teaspoons of olive oil, then rub with the grated garlic and lemon zest. Sprinkle salt over the salmon. Finally, arrange a few onion slices on top of the salmon. 
3. Put back in the oven and bake for 15 minutes. 
4. Remove baking sheet from oven. In a food processor, add ingredients to make sauce: mayonnaise, lemon juice, garlic, ginger, and 1/4 teaspoon salt. Carefully measure out a cup of the roasted bell pepper and onion and add to the processor. Process on high until smooth and creamy. 
5. Serve salmon and vegetables with sauce on the side. Enjoy immediately!
