Fresh Fish with Lime Tomato Garlic Sauce

Ingredients for Lime Tomato Garlic Sauce:
o    ½ cup Fresh Tomatoes, chopped
o    ½ cup Sun-Dried Tomatoes, chopped
o    ½ cup Dry White Wine
o    Juice from 2 Lemons
o    Juice from 2 limes
o    4 TBSP Garlic, minced
o    4 TBSP Sugar, granulated
o    ½ cup Heavy Cream
o    2 tsp Sea Salt
o    4 TBSP Butter, cut into Cubes

Directions:
1.    Warm saucepan over medium high heat.
2.    Place Fresh Tomatoes, Sun-Dried Tomatoes, White Wine, Lemon Juice, Lime Juice, Garlic, and Sugar in the saucepan.
3.    Simmer ingredients 5-6 minutes while stirring. The mixture will reduce by half.
4.    Add Heavy Cream and Sea salt.
5.    Bring back to a simmer and reduce until sauce begins to thicken.
6.    Add cubed Butter slowly while whisking.
7.    Mix until fully combined.
8.    Lower heat to keep warm or serve immediately over the fish.

Fresh Fish with Mango Salsa

Ingredients for Mango Salsa:
Ingredients
•    ½ Cup Red Onions – diced (1/4” x 1/4”)            
•    1 Cup Ripe Mango – diced (1/4” x 1/4“)        
•    ¼ Cup Red Bell Peppers – diced (1/8”x1/8”)
•    2 Tbsps. Thai Sweet Chili Sauce

Directions:
9.    Warm saucepan over medium high heat.
10.    Place Fresh Tomatoes, Sun-Dried Tomatoes, White Wine, Lemon Juice, Lime Juice, Garlic, and Sugar in the saucepan.

Winter White Cosmo

Ingredients:                    Volume:
Your Favorite Vodka                 2 oz
Cointreau                    .25 oz
Fresh Lime Juice/Simple Syrup Mixture        .50 oz
White Cranberry Juice                1.5 oz
Cranberries (floating as garnish)            3 to 4 cranberries 
 
Procedure:
Combine ingredients over ice in shaker tin.  Shake & strain into chilled martini glass.  For a festive touch garnish with 3-4 floating cranberries.
 
Secrets to Shake it Up

    Make your own cranberry vodka infusion, by placing cranberries in your favorite vodka and allow it to infuse for 48- 72 hours. 
    For a stronger Cosmo flavor, substitute your favorite Citron flavored vodka.
    For a fun twist and a little bit sweeter flavor use St.Germain Elderflower Liqueur in place of the Cointreau.
    Increase the volume of all ingredients by 10 and serve punch style. Freeze cranberries in a block of ice so not only does it keep the punch chilled but also looks fun and festive for your holiday party!
