In our kitchen today, Executive Chef Alexa Lemley and Samantha Lemley, Co-Owner, KetoLuxe, explain their new venture and how it helped them make some BIG changes in their life!
Keto-friendly fare for the big game
Here’s some backstory, as told by Alexa and Samantha:
Chef Alexa and Sam made some big changes this year that are going well. They stopped making 240sweet marshmallows because they started eating keto. That’s because Sam was diagnosed with Severe Type 2 Diabetes and had to start taking insulin injections. Chef Alexa began researching ways to eat healthier to help Sam go off medications. It worked!
Chef Alexa and Sam have each lost 75 pounds (a total of 150).
They started KetoLuxe because they were inundated by people who are excited to learn more about keto cooking when they saw their dramatic results. Even if they aren’t following the diet, many people are cutting out gluten, refined sugar, and additives to be healthier and lose weight. They want want to eat foods created by One of the Top 10 Farm to Table Chefs in the USA 2016 to know that they’re good.
KetoLuxe offers Chef-crafted keto foods and curated ingredients. Chef Alexa also shares recipes and insights on how to live sugar free, gluten free, and low carb. Many offerings are vegetarian or vegan. Most are suitable for those that eat Paleo, Whole 30, Diabetic Diet, and other eating plans.

Candied Bacon on a Stick
Gluten-free and sugar-free, this recipe is easy to make. You’ll impress your family and friends with how delicious it is.
PREP

INGREDIENTS
3 pieces thick cut bacon
3 tablespoons brown erythritol
¼ teaspoon smoked paprika
¼ teaspoon cayenne
¼ teaspoon freshly ground black pepper
DIRECTIONS
1. Preheat oven to 275°F. Line baking sheet with parchment paper. Set a cooling rack inside the prepared pan and set aside.
2. In a shallow dish, combine sweetener and spices.
3. Cut bacon in half to create two equal strips about 4 inches long. Thread each piece onto a bamboo skewer.
4. Rub down bacon skewers on both sides with spices. Place individually on rack in pan.
5. Bake for 30 minutes or until crispy.
6. Remove from rack immediately so that it doesn’t stick.
7. Serve same day at room temperature.

NOTES
Each brand of bacon takes a different amount of time to cook. Also, “done” of bacon is a personal thing, meaning different things to everyone. Sam only likes hers crispy. I prefer mine to be chewy. Watch closely and rotate the pan in the oven frequently.

Black Truffle Jerky Dip
Gluten free, sugar free, and low carb, this dip will wow your friends and family with the tantalizing umami of truffle and beef combined with the smokiness of paprika. Serve with fresh vegetables or pork rinds for a party treat.

INGREDIENTS
4 ounces KetoLuxe Black Truffle Prime Rib Jerky
1 cup mayonnaise
4 ounces cream cheese, softened
1 teaspoon smoked paprika
1 teaspoon dried chives
DIRECTIONS
1. In a food processor, pulse beef jerky until just ground.
2. Add cream cheese and mayonnaise and blend.
3. In a medium mixing bowl, combine jerky mixture, paprika, and chives.
4. Chill in refrigerator for about 45 minutes. The longer it sits, the better the flavors will meld.
5. Serve at room temperature.
