Peanut Butter & Jelly Sandwich French Toast Recipe

INDIANAPOLIS (WISH) — A Peanut Butter & Jelly Sandwich meets French toast in this recipe from Tim Griffin of the Carmel Fire Department using his homemade Challah bread. He also made simple and fun S’mores Pie, using what he says is the “easiest recipe ever” and can easily be changed to a Chocolate Peanut Butter Pie as well.

Challah Bread

Ingredients:

  • 4 ½ cups of flour
  • 1 tablespoon salt (crushed fine, kosher or sea salt)
  • 2 eggs
  • 1 egg yolk
  • 2 teaspoons activated yeast
  • 1/3 cup warm water
  • 1/3 cup vegetable or canola oil
  • 1 tablespoon softened butter
  • 1 egg for egg wash
  • ½ cup sugar
  • 2 tablespoons honey

Directions:

Combine the flour, salt, and sugar and lightly mix. Add the yeast to the warm water and let rest for a few minutes. With mixer lightly mixing, add yeast, water and honey. Add 2 eggs and egg yolk. Mix in oil and butter. Mix in mixer for 5 to 7 minutes until it begins to ball up in the bowl. Remove dough from mixing bowl and knead 4-5 times. Shape dough into a ball. Set dough in a greased bowl and cover. Let the dough sit for 1 hour to rise. Remove the dough from the bowl and fold it into itself. Return the dough to the greased bowl and let sit for 1 more hour to rise. Remove the dough from the bowl and pinch off the dough into 4 equal pieces. Roll out (you’re your hands) the portions into 8-10 inch lengths. Braid the 4 portions (check out a You-Tube vide for this!). Brush the braided dough with egg wash. Place the braid onto a greased pan and let the braided dough sit for 2 more hours to rise. Sprinkle the top top with kosher salt. Place the braid into a preheated oven at 360 degrees for 40 to 45 minutes. If the top of the dough begins to darken, cover it with aluminum foil.

Gourmet Peanut Butter and Jelly

Ingredients:

  • Sliced Challah bread or large artisan sliced bread
  • Favorite peanut butter
  • Favorite preserves or jelly
  • Optional:
  • Nutella
  • Marshmallow fluff
  • Banana
  • 2 eggs
  • 2 tablespoons milk
  • Powdered sugar

Directions:

Spread favorite ingredients on bread and layer as a sandwich. Whisk eggs and milk together in a large bowl. Dip the sandwich into the egg and milk mixture, soaking the mixture into each side of the bread. Place the sandwich in a hot skillet, turning the sandwich in the same manner as French toast is made. Remove the sandwich from the skillet when both sides are done and garnish it with powdered sugar. Enjoy.

S’ mores Pie

  • Graham cracker crust for pie – either homemade or store-bought
  • 2 extra large milk chocolate Hershey bars
  • ½ can condensed sweetened milk
  • 1 bag of large marshmallows

Directions:

Break up the Hershey bar into pieces and add to a bowl with condensed milk. Place the bowl in the microwave (or heat it) for 30 seconds until chocolate melts. Fold the chocolate into the condensed milk until it is a creamy consistency. Pour the mixture into the pie crust and spread it evenly. Chill the pie in a refrigerator for a few hours (or ½ hour in the freezer). Remove it chilled, and layer entire top with marshmallows. Broil the entire pie on top rack in the oven on high for 30 seconds to 1 minute to sear the marshmallows. Remove the pie from the heat, cut and enjoy.
