Mini Strawberry Ice Cream Cheesecakes
INDIANAPOLIS (WISH) — This recipe is easy and perfect to make with kids!
It’s more of an idea than a recipe and you can swap out what you like. They’re also a tasty option for Mother’s Day.
Ingredients
- 12 tablespoons granola
- Strawberry ice cream
- Cheesecake or vanilla ice cream
- Fresh strawberries, sliced
Method
- Line a muffin pan with paper, silicone or foil liners. Place a tablespoon of granola in the bottom of each.
- Place a scoop of strawberry ice cream in each, pressing it down, and then a scoop of vanilla or cheesecake ice cream in each, pressing it down.
- Push a sliced strawberry in the top of each. Freeze until firm.
- Remove and serve each on a plate with a fork. Enjoy!
