Cooking up Gator kabobs with Cajun Sensation
Owners Corey Spellman & Jacob White bought the food truck in 2016 while they were in the Kelley School of Business at Indiana University. They went to Louisiana for recipe ideas, met with local chefs, and eventually, chose the gator farm to purchase their meat from.
Once the gator is shipped from Louisiana, Spellman & White marinate it in saltwater vinegar, Bloody Mary mix, and tomato paste to give it the tasty, Cajun flavor.
Menu items include Gator Kabob, Cajun Pork Tenderloins, Gator Chili, Walleye Sandwiches, and more.
