Zucchini-Tini 

1 1/2 inch Skinned Zucchini Cube 
3 inch Skinned Cucumber Cube 
1 to 2 Lemons squeezed
A pour of Simple Sugar
And splash of Water 
And a shot of Vodka

Add all ingredients to a blender, purée, pour over ice, and enjoy.

Zucchini Boats 

Italian Boat 
3 Zucchini
1lb Ground Sausage 
Spaghetti Sauce 
Diced Red Pepper 
Shredded Mozzarella Cheese 
Italian Seasoning 

Mexican Boat 
3 Zucchini 
1lb Ground Beef
Taco Seasoning 
1 cup Cooked Rice 
1 diced Red Pepper 
1 diced Onion 
Salsa 
Shredded Mexican Blend Cheese 

Cheeseburger Boat 

3 Zucchini
1lb Ground Beef 
Cheddar Cheese/ and or Swiss
Ketchup 
Mustard 
Pickles 

Trim the ends off zucchini. Cut zucchini in half lengthwise; scoop out pulp, leaving 1/2-in. shells. Place these in casserole dish.
Next, you’ll want to brown your meat of choice for whichever boat you are making, and add in your seasonings.  Once the meat is browned, you will scoop it into your zucchini boats that are in the casserole dish. You will also want to add the other ingredients for the boat of your choice. Then, top with cheese, place in oven, and bake uncovered, at 350° for 25-30 minutes or until zucchini is tender.

Zucchini Pie Crust

2 cups Flour
1 tsp Salt 
1/2 cup Oil 
1/4 cup Milk

 
Mix in one pie pan. Then, split into 2 pans, and press out .

Zucchini Pie 

2 large zucchini or 3 regular/small
1 can Evaporated Milk
1 cup Sugar
3 tbs Flour
2 Eggs
Cinnamon to taste 
1 1/2 tsp Vanilla 
2 Pie Shells

Slice zucchini thin and place in a bowl.  Microwave for 10 minutes. Now, pour the can of condensed milk into a blender along with the flour, eggs, sugar, and vanilla and set on purée. At this time, begin to add your cooked zucchini slices.  Purée. Pour into your pie crusts, and place in your preheated oven at 350 degrees, and bake for 30 minutes.
