Annessa shares a healthy potato salad recipe that will be the talk of your next pitch in.

Red Potato Salad – how to make it healthy

Boil 3 to 5 pounds of potatoes – try yellow red potatoes (when they are warm, put 3 to 5 Tbl of apple cider vinegar.

Instead of using total mayo – do 1/2 may and 1/2 Greek Yogurt.  You are halving the fat and boosting the protein

2 Tbl of raw apple cider vinegar.  It has lots of healing properties

1/2 c. diced red onions. If you don’t want to bite into the onion you can grate it in.

Salt to taste

Fresh herbs – try dill and flat leaf parsley. The more you chop, the more flavor you release.

A little grated garlic.
