Red Gold Tip: Cowboy ‘Caviar’ Salsa

Linda Wallace from Red Gold prepares a simple salsa that is chocked full of colorful veggies and perfect with your favorite tortilla chips. It’s also a tasty, good-for-you topping to spoon over grilled chicken or fish.

Cowboy “Caviar” Salsa

COWBOY SALSA

1 (15 ounce) can black eyed peas, rinsed and drained

1 (14.5 ounce) can RED GOLD® PETITE DICED TOMATOES with GREEN CHILIES, drained

1 (14.5 ounce) can whole kernel corn, drained

1 jar pimentos, drained

½ cup chopped onion

½ cup chopped green bell pepper

1 (8 ounce) bottle Italian dressing

• In a large bowl combine all ingredients; stir to blend. Cover and refrigerate several hours or overnight.

• Serve with crackers or chips.
